Many people don't realize there's Torah observant Jews in Israel as well as secular people who enjoy a good nightlife. I've never been to Israel but watching the on line cameras as well as videos I can see there's more to it than pious people at the western wall. So, the Sabbath argument is the same that businesses here in the USA have when people want to take off for the Sabbath-- they are afraid of losing business, similar to that woman who said she could only sell to make her income on the Sabbath (despite wanting to "keep" it). The thing is that if people had the faith to observe Sabbath, then the Lord would make them prosperous enough other days to make up for the perceived loss. That's the thing, tho. It takes faith but the workings of the Law is by the flesh. And since most business mentality (both big and small) is going to hell in a hand basket and will eventually perish along with their owners and families, their ignorance drags the rest down who would rather obey. One needs the Spirit of the Lord to obey (aka fruit of the Spirit) vs works of the Law by the flesh. Both the works and fruits are the same -- same criteria (e.g. Sabbath keeping). The difference is the power behind those acts.
