Now that summer is here, I don't like to make hot meals. This is generally due to the fact that we don't have central air nor are there any trees around our house. It can get pretty warm in here. You know the old saying, if you can't stand the heat, get out of the kitchen, and I like to stay out of the kitchen as much as possible on hot summer days. I like to be able to make up a salad or at least the makings of a salad at about 8:00 am and just pull things out of the fridge at supper time, add some bread and Iced Tea and dinner is served!

Fembot shared a recipe for a Greek salad that sounds really good so I thought perhaps we can share some others.



Here is my salad repertoire:
Taco Salad: basic green salad w/spiced hamburger, tomatoes, olives, Fritoes, and a dressing made with salsa and sour cream whipped together. I serve with cheese quesadillas on the side.

Sesame Orange Shrimp Salad: basic green salad with shrimp, fried won-tons, raisins and Orange/Sesame Salad dressing.

Macaroni Salad with either Imitation Crab meat, tuna fish or chicken mixed in.

Potato Salad with cold ham as a side. I tried putting the ham right in the salad once, but I didn't like it as much as with the ham on the side.


Does anyone have any good "main meal" salad recipes?
 
Hi Dora! You and Tina and who knows who else will probably have some good gardening tips you'd like to share. Maybe you'd like to start a Gardening Thread and share some of these "secrets"? Maybe things like composting, proper fertilizing and how to harvest seeds like tomato and pepper? Heirlooms, of course! :biggrin Don't want to be infringing on any Big Business hybrid seed patents. :lol
 
Handy, I am sure that there are so many variety of salads, this thread could go on forever. Here are some off the top of my head:

1. Egg salad with diced eggs, celery, lima beans, corn, snow peas, dijon mustard, mayo or miracle whip (less fat than mayo), tomatoes and red onions. Sprinkle with paprika and black pepper. Place in the fridge to chill.

2. Elbow macaroni salad with tuna and ingredients above.

3. Chickpea salad with romaine lettuce, cucumbers, tomatoes, red onion and artichoke hearts.
Sometimes I add grilled chicken, shrimp or salmon to this salad.

Vinaigrette dressing:
3 tablespoons balsamic vinegar
2 tablespoons fresh lemon or lime juice, with zest
2 cloves minced garlic
1/3 cup extra virgin olive oil
Shake


4. Red-skinned potato salad with eggs, red onions, red peppers, snow peas and carrots with mayo, paprika and black pepper.

5. Cilantro, spinach, tomatoes, cucumber, avocado, feta cheese and few pieces of crushed jalapeno pepper. (might not help with the heat :lol ) Sprinkled with lemon juice and black pepper.


These additions

flaxseed oil, strawberries, cheese, walnuts and almonds

are pretty tasty (and healthy) IMO.
 
I enjoy a good tomato and avocado salad w/shallots or scallions and of course, basil and/or oregano. A light balsamic and olive oil is nice but dressing is optional. Just don't cross dress! :toofunny

You want to really spice up your favorite dressing? Throw a cup of it in a blender and add a couple of anchovie fillets in it and blend until the fishies are all chopped up. No joke! A four star restaurant by me has a House dressing that is out of this world. They bottle and sell in house too. Finally, they broke down and told us their "secret" ingredient is... anchovies!
