Hmmm, somebody must have liked my beef stew last night.....you put it up there twice :biggrin

*EDIT* ...and then you changed it to taco soup which isn't fair because I like both....
 
Here is my favorite soup.

Thai Soup

Ok you make this with good chicken or veg stock….enough to make the bulk of your soup.

Cut about 1 inch ginger into really thin strips and add to the stock that you are bringing to a boil

Also add Fish Sauce to taste and some Palm sugar. The soup has a sweet/salty flavour.

Now cut a Birdseye chilly and add as much as you can handle, I use about two of them, but I like it hot!

You will need, if you can find, some ready cooked Japanese noodles (they came vacuumed packed) or just add you own cooked noodles about two cups.

Also about two tablespoons dried seaweed.
And…one packet bean sprouts

Now, the rest of the ingredients you cut up in thin or tiny pieces. It’s all going in at the last minute so it stays raw and looks great.
I put them all into one bowl as I work and then just add them at the end.
They are:
Some chives, about one carrot, handful of thin green beans. About 5 white mushroom or soak some Shitake mushrooms and cut up finely.
Cut up about ten leaves of fresh mint and 10 basil leaves.
Add fresh coriander leaves as a final touch on top of the soup

OK you can make this as a vegetarian soup and add the noodles now and when its warm, add the bowl of veg and add about half a lime’s juice to each bowl of soup.
Or
You can add seafood like prawns or salmon pieces (or chicken) to the soup until cooked and then add the noodles and the veg etc. I have made it with small beef pieces that I marinade in Soya sauce and fish sauce.

That sounds delicious, Cornelius. I'll have to try that one out. Here's my recipe for Chicken Noodle Soup:

2 cubes butter or margarine
3/4 c flour
4 cans Chicken broth (I use Swansons)
Lawreys Garlic Salt
3-4 cloves of garlic minced
about a cup of cooked chicken (more or less, in my house it just depends on how much chicken is left on the bird as I make this the day after I serve baked chicken)
about 2 cups of chopped veggies. (Carrots, Celery, Onion, Broccoli, Cauliflower, Peas, whatever you like best)
2 med potatoes

12 oz pkg of extra wide noodles (yep, noodles and potatoes in the same soup. It's a hearty soup!)

Melt butter in soup pot. Add flour to make a paste, then add broth stirring constantly. Add garlic salt and garlic. Stir in rest of ingredients, except noodles. Simmer on med-low until veggies are tender then add noodles and simmer for at least another 1/2 hour to an hour.

Throw in a batch of homemade biscuits and suppers done!

My favourite soup is actually home-made vegetable soup made with fresh, garden vegetables and with venison as the meat base.
 
One of my favorite soups is creamed potato soup. It's easy to make:

1. Peel and dice 7 or 8 large potatoes.
2. Cover the potatoes with water and add some minced onions.
3. Bring to a boil.
4. Add some milk and butter. Salt and pepper to taste.
5. Pour some in a blender and whirrrr it into a creamy soup.

Great for a cold winter night or anytime when you feel like you don't want a heavy meal. Goes great with cornbread or hot rolls. Mmmm

Agree with this, excellent taste young man. And a recipe for the Thai Pumpkin Soup:

1. Stir fry Red Curry Paste & diced onion
2. Add cooked pumpkin (cubed) & blend
3. Add coconut milk / cream and stir, bringing to the boil
4. Garnish with fresh coriander.
