While vegetables are good, meat should still be very much in the diet. That is because God allowed it in the OT showing us what types of meat are allowed and what types are not allowed. Now that said, I'd wish our cattle would be fed more grass instead of grain which upsets their balance, not to mention drugs they feed them. So, it's not the "saturated fats" and/or "Cholesterol" that are bad for one's health. They are merely the nutritional scapegoats for the modifications that man is putting into the foods--- its' those modifications that are the health problem as there is no such thing as a "balanced diet" any longer. This is why many people take vitamins, too, and even those are modified which is why I say your run-of-the-mill multi-vitamin is probably not much good (and then they use those same type of crappy vitamins in 'studies' to say that vitamins don't work!). It's better with the higher dosages in case they aren't as potent any longer. I've been doing this and at 56 have no health issues nor medication despite those who'd warn me I'd headed toward a brick wall while they are already on several meds and look older than I am in their 30's already.
In the bible, I am not aware of anyone who was a vegetarian after the flood of God's chosen people, but that's a personal choice. Before the flood mankind was vegetarian, but after the flood it seems our biological makeup changed as people's ages declined rapidly and now we were told we could have meat. It contains valuable B-complex vitamins and also minerals such as iron and selenium.
