Their explanation is that nerves in the body need sodium (salt) to work, which the chef adds, and this can cause even disconnected and intact nerves on that section from a whole body to start "working" in a way causing the raw chicken to move.

Not sure if this is true or not, I have never seen it, but I wouldn't want to. Looks gross lol. I wouldn't be eating raw chicken anyway.

Me neither, but are you saying that the nerves are still functioning even though the chicken is dead?
 
That is what I understood they said. The nerves were not moving, but the added salt gives them enough to start moving again. Not sure if it would work that way, but I order my chicken cooked and that would damage the nerves so I don't know. Either way, the video could always be a faked one, too.

Here's how nerves work in under 3 minutes. It's still a bit complex, but it starts with the electrical resting state of a nerve fiber, which is maintained by potassium ions pumped in, and sodium ions pumped out. This means the nerve cell has a net charge of negative inside, and a net positive charge outside.

A stimulation on the cell membrane (usually physical, but in this case massive doping with salt, which is sodium chloride) triggers the sodium gates to open, sending sodium ions inside, and results in a temporary localized reversal of polarity, with positive inside and negative outside. This wave of differential permeability, called an "action potential", travels down the nerve fiber, and is the signal that is transmitted to a muscle fiber which orders it to contract.

Simple, yeah?

You mean just like chickens can supposedly run around without a head for a period of time?

Yes, but it depends upon how much of the chicken's head is cut off. Their brains are partly in their neck, so cutting off the top of the head leaves part of their brain still attached to the chicken. One chicken survived for 18 months after the top of its head was removed.

When I was a young man we had a friend raise 50 chickens for us. We bought the feed and then when they were old enough we went and butchered them.
The easiest was is to grab the chicken by the feet and then place their head on the ground with their necks under a shovel handle or an axe handle. Stomp down hard on the handle and then pull their feet. Their head pops right off. Then you can either string up the chicken by their feet or you can just let them loose. ( I let them loose).
They run about for a few minutes flopping all about. They can't see nor think. (its not like they have a lot of thought to begin with)
Then we eviscerate them. and then dip them into boiling water to get the feathers loose and then get to plucking. Its a lot of work. Then a quick flame to burn off the hairs and into the freezer they would go.

Interesting and disturbing at exactly the same time lol!
 
This also happens with really fresh sushi sometimes. I had a friend tell me once. As soon as the piece of fish hit the soy sauce (which has a lot of salt), started twitching. Don't know if he still ate it.
