A Scoville rating of 2,500, is very much on the low side for jalapenos. If he loves them, it might be a nice gift to grow some for him. As Stovebolts suggests, it's always good to check first; jalapenos seem to be more variable in heat than other peppers.

Ha, if most knew what “it” is I think your right, they wouldn't eat it, including Trippe.

Both of those are my favorite. Except they are so rich I can only eat a couple. I used to buy three tacos at a time and Lingua was one of the three and saved for last!

As a side note, I like making my own Pico, it’s super easy as you probably both know. One thing I like to do with it is use it with eggs and corn tortillas.

I take a small frying pan and put about a quarter inch of oil in it, bringing it up to temp on medium. I then put my corn tortilla in, wait for it to start to raise then flip it. I then put an egg on it (making sure not to break the yolk) and use a spoon to baste the egg in hot oil till the egg is fully cooked the way I like it.

Plate it and garnish it with homemade pico. It’s the best!

I actually don't think I've attempted my own pico, but I'm sure it can' t be hard. Tomato, cilantro, lemon juice...onion maybe? I don't know, I'm not a huge pico fan, but a little bit of it is all right. =P

Eggs are good in corn tortillas. So much you can do with corn tortillas. Frying the taco's with a good meat inside is always delicious, too =D

I can't wait to make the lengua from the cow tongue I bought this week. Can't wait to use the bones for broth, too. The rancher seems to appreciate that I like to buy his organ meats and bones...always seems like he has some in stock =P
 
If you pressure cook it, the skin peels right off. And you're right, it's delicious.

You know, pressure cooking would probably be a great idea...sounds like it would work better. The first time I made lengua in the crock pot, the skin peels right off, no problem. I recently got a new crock pot with a locking lid and it keeps the steam in really well...maybe it'll be easier this time.

Maybe one of these days I'll get a pressure cooker =P

Yeah, it's pretty simple, even I can make it lol! Don't forget the jalapenos and the salt!
 
People who taught me, say lime juice is better.

Tomato, onion, peppers, a bit of cilantro, salt, and lime juice. Works for me.
Maybe so. I'd probably have to use lime anyway if I wanted my husband to have some, he has issues with lemon.

Sounds right, though =P I suppose I came up with plenty ingredients considering I've never made it xD only eaten it.
 
Some people get a little nervous about that if they learn what it is. Personally, I like to pressure cook it, and then season and reheat it, so that it has the texture of brisket. It is very good, lean and flavorful.
I'd like to bite mine at times.
 
Jalpenos burn at times my father's mouth and stomach. In a camping trip in 2011. He did not feel good for a couple of days there. But thankfully he got well. He loves them. But needs to be careful.
