This is called souse which is made from cooked pork. I do not eat pork so I make mine either from beef, lamb or chicken.

Ingredients

1 1/2 pound of lean beef, lamb or chicken breast (cooked)
Cut the cooked meat in pieces and put to cool

To make the pickle

2 large cucumbers diced
1 large onion diced
chopped parsley
1 large sweet pepper chopped (a piece of hot chili pepper can be chopped with this)

Place these in a bowl
Stir in a 1/2 tsp salt
1/2 tsp white pepper

Mix all ingredients together and add the cooked meat. Stir and place in refrigerator for 20 mins.



Steam pudding is usually eaten with this which is made from sweet potato.

Steam pudding
Peel and grate 2 pounds of sweet potatoes
Place in a large bowl
Add a tbls of olive oil or vegetable oil
Place a grated onion and sweet pepper in the mixture
2 tbs of brown sugar
1 tbs of browning and 1/2 cup of water
Mix this ingredient in a bowl and stir with a wooden spoon
Two methods of cooking
  • The mixture can be placed in a greased dished and placed in the oven and bake stirring occasionally so as not to stick to the bowl
  • It can also be placed in a saucepan and placed over a moderate heat, cover and let steam. The mixture must be stirred occasionally and whilst cooking e puff sound is heard as the potato is cooking.
When mixture is finished, let cool and place the pickle on the potato mixture. The finished product should look like this.

what is browning?

It is colouring which is simililar to soy sauce. It is optional...sorry about that. Not sure if it is found in the USA but it is found here and in England. The old folks in Barbados used to make theirs by placing brown sugar in a pan and letting it burn.. To avoid all the hassle just ignore that one igredient. The purpose is to make this simple:idea:lol

I have never thought of using fresh coconut

That is why it is called coconut bread. The coconut is grated. I do not use egg in mine. Hope to post some pictures of mine sometimes soon.
 
This is the flying fish which is the national fish of Barbados. It is mostly cooked with cou-cou a mixture of corn meal and okras.
This is our national dish.

The cou cou is a traditional African dish which the slaves brought to the island.

Wow! I haven't had Souse in years!
 
I met a Panamanian women few years ago when I visited St. Petersburg in Florida. Her father was from Barbados and her mother Panamanian.
