Today I'm working on a German Chocolate cake for my father's birthday last weekend.

Never made it before...
So I used Betty Crocker's recipe... slightly modified. (I'm a professional...I know how)

I used 6oz of chocolate instead of 4 (melted over double boiler)
And only 1/4 Cup of water...but I could have used cold coffee... probably would have been better. I also added a ¼ sugar to the egg whites to keep them from busting. (Probably should have used more)

The flour seemed a bit light now that they are baked. (Yeilded 3 9" pans). They fell slightly in the center but since I wrapped the pans in a single layer of wet terrycloth towel they baked incredibly flat. I've seen worse falling cakes in pictures of final product showing what it should look like. So I'm kinda confused why they would showcase a fallen cake.

Now onto the frosting.
Coconut-pecan is not my favorite...I'm not a coconut fan.
But I found a recipe that looks good from my recipe.com and will probably adjust it a tad...I'm going to add mini chocolate chips. That ought to help.

I'll let you know how it all turned out.
 
What timing, Brother! I'm sittin here drinking coffee thinking about what shall I make for dinner tonight. Lol

Yesterday I was working in the country and stopped at a roadside farmer market stand...and bought too many jalapenos, but they looked soo good.

I need a new jalapeno recipe to eat these up. I'm also trying to incorporate some of my dad's pantry items that he was stocked up on...which include, canned pineapple, beans, rice, and so forth (lots of pineapples!)

I found a jalapeno pineapple relish recipe for Hawaiian dogs and it looks good, but I've never made it before...have you? Or I'm open to ideas...

A trip to the store is not out of the question for missing ingredients, but Maybe include pineapple & jalapenos so I can use them up, lol.
Not jalapeno poppers though, I can make good poppers but have made them quite a bit of late and want to try something different.

That Jalapeno/pineapple relish sounds great...instead of red pepper flakes for the fire. Use a little mango with it. (Or cantelope)

Or you can make some salsa with all those garden tomates coming in... should be awesome.
 
Okay,
Cake seems pretty good. I froze the three layers last night and trimmed them this morning. (So they would be flat)

The frosting from myrecipies.com worked great for covering all three layers....just the right amount of frosting.
I have also "crusted" the frosting with mini chocolate chips.

My wife is drooling over the cake trimmings and licking the bowl of icing.

She can't wait to get to dessert from lunch today. I was going to bring some filet mignon steaks I caught at Kroger for half price...but he started ribs already.

So even though it's covered in icky coconut... everyone else ought to enjoy it.

Yeah, after I left I thought duh salsa, lol. So I (googled it) stopped and got the stuff for Hawaiian dogs and salsa. They had cantaloupes at that market yesterday but all of them had a soft spot on them so I passed on them. The tomatoes looked good and I never hardly pass them up. I already had cumin and garlic and stuff. Thanks Brother.
 
The cake was a success.

My father was thrilled. (79th birthday)
He hadn't had a scratch German chocolate cake in a long time. And it is his favorite.

For someone like me who doesn't like coconut...it was OK.
