Made with a mix of sweet Italian sausage and hamburger, used Mozzarella, Parmesan, and Riccota cheeses. Mrs. Barbarian likes this better than my old recipe. She got two helpings and asked if we could have the leftovers again yesterday.

Very nice.

I've been using bescamella. Its lighter and more tasty. Also, I make 4 or 5 layers but with the ricotta it would be too much,,,too rich.

How was your old recipe?

Need to learn how to make that sauce. Sounds like a good way to go.

I used to use a more traditional italian sausage, but Mrs. B likes it with sweet sausage.

I checked out the recipe for the besciamella.
I agree with everything except I don't make the roux.

I usually make 3 cups:
3 heaping tablespoons of butter (unsalted)
3 tablespoons of flour
3 cups of warm milk
salt
pepper
nutmeg

I also add 1 beaten egg right after the milk.

melt butter in pan
add flour, mix well
add warm milk mixing with whisk
add one beaten egg
salt
pepper
1/4 teaspoon ground nutmeg


I also agree about the sauce.
I also believe the ragu' has a lot to do with the final product.
I like how Mrs. Barbarian makes her ragu'.
