Oh Gabe! You are making me so hungry!! I love curries...the real stuff. But you should know, whatever recipe you use in the U.S is going to turn out a bit different because the curry powder is not the same....unless you find an Asian friend who can get you some of the good stuff. My sister often cooks for me the most delicious curries using Brussel Sprouts (one of the many perks of having such a caring sister ) The next time I speak with her, I'll try to remember to get the recipe from her. It may be a little too spicy for some (its not the fake stuff you get in take-aways) but add a little milk to it and it should make it mild enough for most tastes. I'll add it to the recipe thread.
