Fancy Zucchinni Bake

Ingredients:
2 zucchinni squash, cut into slices
1/2 onion, chopped or sliced
1 can "no salt added" tomatoes with green peppers
1/4 cup bread crumbs
4 slices of your favorite cheese
(I use Kraft cracker cuts white cheddar)
1/3 cup grated parmesan cheese
Mrs. Dash's Italian Medley seasoning (is salt free,
no msg)

Put all of these ingredients together in a baking pan, with a bit
of olive oil, like, 2 tablespoons.
Top with the cheese, cover with some aluminum foil, or
whatever you use to cover the foods you bake,
bake at about 350 for 30 minutes.
Let it cool off a little before eating, then enjoy!!

"Hot Summer Day" Mashed Potatoes

I made these, today, because I didn't want to heat up the
kitchen, boiling potatoes.

Ingredients:
5 or 6 peeled white potatoes
Mrs. Dash original seasoning
garlic, minced
garlic salt
butter
skim milk

Peel and halve about 5-6 white potatoes, place all in a microwaveable
bowl, sprinkle with a bit of garlic salt, and Mrs. Dash original seasoning.
Cover with another microwaveable bowl.

Microwave for about 8 minutes, or, until you can stick a knife easily
through the center of each potato.
Get out your electric mixer, and use it to mash the potatoes up a little.
Or, if you can find your potato masher, use THAT. :P
Then, add about 3 tablespoons of butter, about 3/4 cup milk,
minced garlic, and Mrs. Dash, and some garlic salt.
Mix it all up in the bowl, for about a minute and a half, with the electric
mixer, until the potatoes look well blended.

Serve with your favorite meat, or soy product,
and add a side of Bird's Eye steamed vegetables.
You steam them right in the bag, in your microwave.

For a small steak, quick cooking, no heating up the kitchen:
buy some small, 3 or 4 ounce steaks,
put them in a frying pan, with melted butter, and garlic and chives,
cook till the meat is done, takes about 3 minutes per steak.
 
Cool, thanks. For an even more healthy alternative (and a creamier and more naturally butter-like flavor) try using Yukon Gold potatoes instead.

Zucchini is also good stir fried in a little olive oil. With just a tiny bit of kikoman stirred in.
