If sediments have been accumulating on the seafloor for three billion years, the seafloor should be choked with sediments many miles deep.

I don't know if this accumulation of sediments would hold up as any proof against an old earth. There are currents in the ocean that would have to be taken into account.

Not only that, but plate tectonics repeatedly subducts ocean sediment below the continents or below newer ocean crust. Turns out, there's just about the amount you would expect, if the continents moved at the rate geology has shown them to move.
