In many mountainous areas, rock layers thousands of feet thick have been bent and folded without fracturing. How can that happen if they were laid down separately over hundreds of millions of years?

Over time, rock can plastically deform. Stresses cause crystal deformation, recrystallization and deformed strata. Sometimes, the pressure is more than the rock can accommodate and it fractures. Such fractures are called joints if they don't move, and faults if they do move.

Rocks deforming plastically under compressive stresses crumple into folds. They do not return to their original shape. If the rocks experience more stress, they may undergo more folding or even fracture.

A very thin layer of rock can be bent in a very short time. It's observable in labs. And there are sandstones where even thicker layers can be bent in a short time without fracture...

Folding most rock, without fracturing it, takes millions of years. And it happens because of plate tectonics, which occurs in terms of centimeters per year. Faster rates cause the folds to fracture, which we see in places in the Earth's crust.
