Here's something you may not know about me I love to cook! I specialise in Mexican, Greek and Southern food. So I thought it might be fun to share some recipes, please feel free to post your favorites as well I love to try new things.

Here is my Souvlaki recipe...
3lbs Fresh Turkey, Chicken, or Pork
3/4 Cup Olive oil
1/2 cup lemon juice
1 Tbsp. Oregano
1 Tbsp. Salt
2 Tsp. Garlic Powder
2 Tbsp. Pepper


Combine all ingredients but the meat in a gallon-size ziploc bag and mix well. Add the meat. Refrigerate and let marinate for 2 days. Put on Wooden skewers and grill for about 8 - 10 minutes or until done.

Note: Soak skewers for a couple hours to prevent them from burning.

Another note: Letting them marinate for at least 2 days is crucial if you use chicken, as chicken takes a bit longer to absorb the flavor throughout the whole thing

Great stuff I have some soaking as we speak. I have already had one person here ask me for this so I hope y'all try and enjoy it!

My hubby is the same way. Have one or two Mexican...or New Mexican recipes I can share with you. Will try to put them up in this thread via reply here soon.

My favorite recipe is one I got at a ladies retreat, I will go look it up and post it tomorrow, but for now here is an easy one that tastes great!

Fry up a good quality breakfast sausage, (like Jimmy dean)
add it to a small crock pot with two cans of Campbell's Fiesta Cheddar Cheese Soup, one cup of your favorite salsa, and you have a wonderful dip to eat with Frito's or Tortilla chips!

This I found on the irritable bowel syndrome website (though I don't have that problem it is still delicious and a good recipe to know if you also want a gluten free recipe). Great store cupboard recipe and delicious.

Baked chicken with plums (or peaches!), ginger and soy

4 chicken breasts (depends how much sauce you like)
Olive oil cooking spray
1 onion, peeled and chopped
2 Tablespoons lemon juice
1 Tablespoon soy sauce
1 teaspoon ground ginger
1 tablespoon tomato puree
2 tablespoons soft brown sugar
1 teaspoon salt
1 cup/340g/12oz plum jam (apricot jam if using peaches)
1 teaspoon dry mustard powder
dash of Worcerstershire sauce
1 garlic clove
6 fresh plums/apricots or peaches, stoned and quartered


Season the chicken pieces, then brown them lightly in the olive oil spray and set aside. In a separate pan, gently sauté the onion (with olive oil or butter spray) for 10 mins, or until soft. Add all the remaining ingredients except the fresh plums and simmer for 15 mins.

Arrange the chicken pieces in a single layer in a baking dish. Cover with the sauce and scatter over the plum quarters. Bake in an over preheated to 180C/350F/gas mark 4 for 45 mins until bubbling.
I usually serve with boiled rice and have a salad bowl on the table. You can make the sauce part the day before if you need to.

INGREDIENTS (Nutrition)

* 1 pound ground beef
* 8 (6 inch) corn tortillas
* 1 small onion, diced
* 1 pound processed cheese food, shredded
* 1 (4 ounce) can green chile peppers, chopped
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1/2 cup milk

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C). Grease a medium sized casserole dish.
2. In a medium skillet over medium heat, cook the ground beef until evenly browned; drain fat.
3. Place half of the tortillas on the bottom of the prepared casserole dish and spread with half of the onion, cheese, ground beef and chiles. Layer with the remaining tortillas, onion, half of the remaining cheese, ground beef and chiles.
4. In a medium bowl, dilute the soup with milk and pour over the top of the casserole. Bake in the preheated oven for 30 minutes. Sprinkle with the remaining cheese and bake for another 5 to 10 minutes, or until the cheese has melted.
 
Here's another great marinade.

Tequila Lime Chicken.

4 split boneless, skinless, chicken breasts
1 T fresh minced garlic
1/2 cup fresh squeezed lime juice
1 t kosher salt
1 /2 cup gold tequila
1 t fresh ground black pepper
1 1/2 t ancho chili powder (or dried ancho Chilies if you can find them)
1 T olive oil

Marinade overnight and grill or broil.
 
Johns K-Dinner :P


2/3 box of Kraft dinner
1 full cheese packet
1/2 stick of butter (3 TBSP)
1 TBSP of Pepper
1 Teaspoon hot sauce.

Spicy :shades

Apple Dumpling

2 Granny Smith apples (quartered)
2 Cans crescent rolls
1 ½ C sugar
2 stick real butter
2 t cinnamon
1 can mountain dew or sprite

Wrap peeled apples in crescent rolls and pour rest over rolls. Bake @ 350 30 min
Covered.30 min-uncovered. You can put some of the sugar and cin. inside rolls.

:bump I tryed this, but I used Chorizo instead of American breakfast sausage. Good stuff.
