I think the issue is more that atheism is treated as if its a religion when its a negative claim that says the person doesn't believe in God or any gods. So your position is going to have to adjust to the argument based on the individual. You can't disprove atheism because its not a positive claim, instead you can only assert your positive position and ask what the other person is open to as evidence. The person may not even know what they would accept as evidence. So the best way is to listen and try and see where the person is coming from. If you are dealing with an atheist that doesn't make any positive claims, then you shouldn't waste your time, because its probably not going to be a good faith discussion.
