Is evolution really science? Has anyone ever seen an animal turn into another animal before their very eyes?
 
The vast majority of it is not testable or observable it is faith driven. However micro evolution or variations, natural selection etc. can be seen in action and are scientific in nature.

[pedantic mode]Evolution is a process, not a science. Biology is one of the sciences that studies evolution, for example, so I suppose in this sense you can talk about evolutionary science, i.e. the sciences that study evolutionary processes and their implications.[/pedantic mode] ;) . If you think that evolutionary theory supposes that one animal will 'turn into another', you have a mistaken understanding of evolutionary theory.

In what way do you regard evolutionary theory as 'not testable'? Perhaps you are unaware of this video which models evolutionary processes:

Insofar as you appear to accept the existence of microevolution, what mechanism prevents microevolution from becoming macroevolution and how can that mechanism be identified? Are ring species an example of microevolution or macroevolution? Please explain your reasoning.

The theory of evolution has an overwhelmingly rich amount of evidentiary support from science in areas of specialty where it is relevant, including biological and geological sciences as well as mathematics. The theory of evolution makes no implication that an animal would ever do such a thing as you suggest; it is not individuals that evolve in the sense of biological evolution but rather it is populations that evolve over time.

Arguably the best way to quantify and measure evolution is changes in allele frequency (i.e. what percentage of an interbreeding population possesses a specific gene). This change happens over time due to differential survival and reproduction.
