Honey is a gift of God. It's a blessing.I guess the real question would be: What is the main reason you are using honey? If it is just for taste, then the answer would be in line with whatever you like. Otherwise, if you are using it to inoculate yourself against allergies, then you should go for whatever type you have found that you are allergic to specific flowers/plants. Using honey this way is very effective.

A nice dark, rich color --- leaning toward brown.
It tastes good by itself, not too sweet.
It's yummy with a good piece of Parmigiano Reggiano.

Here that costs about E7. (8$) and I think it's expensive! (because it's is the most expensive honey around here).
We also see those boxes where the bees make the honey in many places.
I like to see the bees wax in the bottle, but it's not done here.
