How about orange blossom honey?

Clover is so yesterday and common...at least go after some alfalfa honey.

What's your favorite and why?
 
I guess the real question would be: What is the main reason you are using honey? If it is just for taste, then the answer would be in line with whatever you like. Otherwise, if you are using it to inoculate yourself against allergies, then you should go for whatever type you have found that you are allergic to specific flowers/plants. Using honey this way is very effective.

Honey is a gift of God. It's a blessing.
It tastes wonderful.
I like it for a variety of reasons. Local honey does assist in allergies of hay fever.
(Does nothing for pollution allergies)

But the various natural flavors of honey is unique as well. Real, natural, unprocessed honey is pricey. Tupelo Honey is out of stock at the moment... should be able to get some this fall...for a while. But Expect to pay outrageous prices for it.

Kinda like vanilla beans. Where they once sold for $20-40 per kilo now they sell for $250 per kilo and aren't as good.

Saffron is back to $80-90 per oz

Rare, good food is expensive these days.
 
BTW there are medicinal honeys as well. They contain antivirals and antibiotics.

My favorite honey is all natural and all organic: my wife!

Chestnut honey.

It has a slightly bitter taste that I like.
A nice dark, rich color --- leaning toward brown.

It tastes good by itself, not too sweet.
It's yummy with a good piece of Parmigiano Reggiano.
Some put the honey on the side, and some drizzle it on top of the slice.

It can be purchased anywhere in Italy. In some places you might have to go to specialty stores.
It's produced in my area. Kind of expensive because chestnut trees are not found everywhere.
Remember it for when you get here.

P.S. That would be Tuscany, but other areas too, like Abruzzi.

Do you know anything about Royal Bee Honey?
It's a big thing here. It's supposed to be a good immune booster.

Antivirals is in some types depending upon the flowers and whether the pollens contain antivirals.
Same thing for antibiotics... some types of honey are antibiotic because of the flowers the bees frequent.

Most give people some natural resistance to hay fever.

So you think this Queen Bee honey might really work?
It's sold as a health booster.

If you have to use regular honey, it don't know if it's worth it.
Think of the calories you'd have to consume!

The ones that have the true health benefits (aside from local unprocessed honey for hay fever) are from New Zealand and I can't remember... maybe either Australia or Africa...

At any rate enjoying honey for it's flavor is what it's all about.

It's best Straight from the comb. And a little beeswax ain't gonna hurt anyone.

A pound is about 440 grams.
Here that costs about E7. (8$) and I think it's expensive! (because it's is the most expensive honey around here).

We also see those boxes where the bees make the honey in many places.
I like to see the bees wax in the bottle, but it's not done here.

You'll just have to wait to make a trip!

I know that I am in desperate need of many liters of European beer and wine.

They simply don't have the good stuff here in America. The European cheeses are wonderful as well. (American has way too much salt)
And the daily fresh bread from the local wheat flour...*sigh*

Nevermind the awesome sausages and streudel.

I feel a road trip coming up.
