I think you should go ahead and pick the day. Most people work on Wednesday, and it may be difficult to get to choir practice with traffic, dinner, and homework, etc. Sunday before church seems best, especially if you have an adult choir practice that same time, because the parents will have something to take their children to during their own practice. Just a suggestion. If not, then maybe a tear of voting ballot on the bottom of the letter would be good. Just say something like: We are asking all parents to vote for the day that is best for their family's attendance at choir, and whichever date has the most votes will be chosen.

We would like to invite the children of our church to come and worship with us!
Children's Choir ,for ages 00 to 00, begins Sunday Septemeber 00, at 0 0'clock. We will be learning scriptural, children's songs, and singing them in church to give our children an opportunity to praise the Lord.
In order to do our best for God, and to do all things in order, we are asking the parents of all children participating to sign a commitment form to insure that all practices, and performances, will be honored. This is an opportunity for our children, and in order to maintain a high level of participation, so that the choir functions well, we hope that the parents will do their best to have their children present, and on time, out of respect for others participating, and ultimately for the glory of God.
