Turning water into wine

I'm confident the wine was fermented since wine in the account is symbolic of the Holy Spirit, who also gives joy and gladness of heart. (I probably would have changed the water into Coke, which also gives joy and gladness of heart. :) )

Jesus came to change the knowledge of God--the water of the Word contained in the earthen vessels of God's people (2 Cor. 4:7) set apart for ceremonial purposes--into the wine of the Spirit. Which would happen later, after the resurrection--thus the meaning of "My hour has not yet come" in the story. All of this in the context of a wedding, symbolic of how we are joined to Christ's body in marriage through the giving of the Holy Spirit.
