I'm rather in agreement with the understanding that the Levitical laws regarding what God's people could eat, referencing only the Israelites that He brought as on wings of an eagle, was solely and only applicable to that group of people living upon the earth. As far as the general population of the earth, God was very clear to Noah that we can eat all manner of living creatures as food for our bodies.
I believe that one needs to understand God's purpose in calling Abram of Ur, in order to understand His purpose in providing a dietary list for the Israelites.

If you are living on words, you want a healthy source of nutrition and a diversity of nutrients. Positive selective faith building words. Immune system fighting of evil words. Just like your body works, you want yours and others to live.
The natural Jewish dietary laws are ultimately a symbol of how we use words.
Just like a seed is compared to the Word of God, the Jewish diet makes a hidden statement.
The words describing the negative actions of Jews, was written down as a warning that we do not do the equivalent to what they did wrong.

The obvious spiritual things of the law may have physical things that demonstrate the concept.
The one new man is a combination of Jew and Gentile in Christ Jesus.
Jesus taught in parables to the multitudes, but to the disciples (in private) he explained the hidden meanings (Matthew 13 Mark 4). The diets carried a nutrition message, and a spiritual message.
