I've never heard of ' chrism ', it is not something used in independent Christian churches.
A symbol is something that represents something else. It does not have any power in its self.
 
Anointing oil represents the combination of God's Spirit and the water of life. In the Bible they used olive oil to heal the sick. It's not the oil that heals or anoints, but representative of God's healing power.

Mark 6:13 And they cast out many devils, and anointed with oil many that were sick, and healed them.

James 5:13 Is any among you afflicted? let him pray. Is any merry? let him sing psalms.
James 5:14 Is any sick among you? let him call for the elders of the church; and let them pray over him, anointing him with oil in the name of the Lord:
James 5:15 And the prayer of faith shall save the sick, and the Lord shall raise him up; and if he have committed sins, they shall be forgiven him.
