The genetic diversity for these ecotypes already existed in the snails’ DNA. Nothing new is being created; nothing is coming “from scratch.”
It's a common superstition among YE creationists that evolution is supposed to make things "from scratch." In fact, the evidence shows that evolution proceeds by modifying things already present. Recombination is one way that evolution happens. New kinds of living things to sometimes evolve that way. However, mutation is also involved in almost all the evolutionary processes we actually observe. Here's an example of that superstition:

"This snail study is just another example of natural selection and adaptation, not evolution."


Remember what biological evolution is. A change in allele frequency in a population over time.
