How could a series of sedimentary layers fold without fracturing? The only way is for all the sedimentary layers to be laid down in rapid succession and then be folded while still soft and pliable.

How could a series of sedimentary layers fold without fracturing?
It would take huge pressures and millions of years to do so. It's not surprising that it happens. Sometimes, even then, the rocks are folded too fast, and they shatter.

Here's a quick and simple explanation. Note that even when rocks do fold without breaking, there are microscopic signs of stress in the crystalline structure of the rocks:
