How do you like your pancakes?

Made from scratch buttermilk are my favorite. Sometimes I'll use yogurt in place of the buttermilk. Yogurts flavored with fruit add a nice touch too.

Another favorite of mine is sourdough pancakes. My sourdough is about 15 years old now, so it has a pretty good tangy flavor.
The day before I make pancakes, I take my sourdough out of my refrigerator and feed it with about 1/2 cup flour and water to obtain preferred consistency. That evening before hitting the sack, I feed it once more before with about 1 cup of flour and enough water for consistency.
  • One egg whipped well
  • 1-1/2 cups active sourdough
  • 1/4 cup melted butter or oil
  • 1 tsp vanilla
  • 1/4 cup milk powder
  • 1 Tbls sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
Here's a great waffle recipe. These come out crispy and light. To the pancake recipe above, add
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg
  • replace the sugar with brown sugar

Well, I like mine:

1. when someone else cooks them
2. when they are accompanied by bacon, eggs, hash browns and sausage
3. when someone else is footing the bill for breakfast
