What about chicken taquitoes? Ooohhhhh yummy! Especially homemade :)
Chicken and yellow rice with black beans is as close to Mexican cuisine with chicken in it that my tummy will accept. But even then, pork is by far preferred. By far.

I'm busy jerking Jethro's chain, you know, one hillbilly to another! I eat my chili with or without but at a Chili cook off the ones with beans will not usually even place. But then redneck cowboys and cowgirls are real nuts any way.

Well, I can't argue that chili without the beans tastes better. That's why I prefer it that way.
 
Have you ever had carnitas? That is pork and really good too
People think Mexican and Spanish food are hot, they confuse TexMex with Mexican. All of my Mexican and Central American friends do their best to get me to eat less pepper, my wife and daughter also. Very little food south of the border is hot.

I was told that they laugh at what we gringos consider 'hot' Mexican food in our Mexican restaurants.

The best Taco in the world is taco de Pastor y tortilla de maez. Pastor is pulled pork in a chili gravy and on a corn tortilla it is incredible! Add some Chili Piquine (pickled Birds Eye Peppers) and it is heavenly.

Well I didn't see the word 'chicken' in that (in English at least, lol) so it's prolly safe for consumption.
