Ummmm, you caused me to sin, ...lust of the stomach,

...after church we bought some flank steak, marinated it for 2 1/2 hours, my bride made guacamole with avocados from our tree, cut a dozen corn tortillas into chips and fried them in oil, fried another dozen flat, stir-fried some sliced green, red and yellow bells and some sliced red onion, BBQed the flank steak, cut it across the grain into very small pieces, ...spread some guacamole on the fried tortilla, added some beef, veggies, tomatoes, sour cream and voilà Cal-Mex tostada in Tahiti with corn chips and guacamole on the side, ...um, umm, good!

Here I am in this crazy mechanical bed with a 450 dollar, 20 inch Central Texas Smoker I must depend on my daughter to fire up. there are still eleven red and White Oaks in my yard, designated Fire Wood and there is still an eighth of a cord cut in the front yard and I ate two chili dogs for supper... you just ain't right brother!

I love me some smoked beef, pork, lamb, chicken, fish, sausage, ...Father has blessed me with a WSM charcoal smoker and a gas smoker that I have modified to also use a PID controlled electrical strip heaters for the below 150° temps, ...that means I have plenty of smoked meats for my chili to make California chili dogs. :sohappy

LOL! If the yanks ever figure out the use of smoked Jalapeños and tortillas we will never run them home again. God bless bro. Oh, I've got the menu for Heaven and pulled, smoked pork, simmered in red sauce is on the menu.
