How can there be evening and morning and a day with no sun?.

Not easy to answer in fact I don't think we can at this time know for sure. I will say this though I believe it has everything to do with the creation of the universe. One ancient sage Moses ben Nahman thought the deeper meaning of "evening" to morning" had to do with turning "chaos" into "order". Which if you look at the scientific side of the birth of the universe that's what seems to have happened. In Hebrew language it does kinda maybe look like that could be an answer.

We do not have to guess. It's a certainty. Jesus is the light of this world. He was then, He is today, He is tomorrow. This is simple and for sure. As a Christian I know this. That's 101
