As part of Adams punishment animals became frightened of mankind.
Following the flood God gave Noah permission to eat meat.
So while eating of meat was a result of the consequences of sin, it is not sinful to eat meat. The permission was given due to the drastic changes to the earth's climate and the resulting difficulty in having a vegetarian diet.
Genesis 2:15-20 God created animals after He created Adam, but before Eve was created, and gave Adam to name them.
Genesis 9:3-5 we read that God gave permission to eat certain animals only after the flood as a means of survival. When Noah and his family exited the ark the Earth was pretty much left barren giving Noah and his family with no choice but to eat certain animals.
The only dietary restriction specified for Christians in the NT are to abstain from food sacrificed to idols, from blood from meat or strangled animals, Acts 15:29.
