Some people get a little nervous about that if they learn what it is. Personally, I like to pressure cook it, and then season and reheat it, so that it has the texture of brisket. It is very good, lean and flavorful.That picture of street tacos Mmmmm. Hold the rice and it's my perfect plate xD

If you pressure cook it, the skin peels right off. And you're right, it's delicious.It takes a bit of effort to get that layer of skin off the top, but the meat inside is all worth it!
I'm told it's not authentic, but I like to use poblanos in pico instead of jalapenos. For some reason jalapenos seem to give it a slightly bitter flavor. I grow poblanos with a slightly thicker-walled pod than most, and it seems to work well. And the pico has brighter, more citrusy/onion taste to it.Plate it and garnish it with homemade pico. That’s a great idea. One problem I consistently have with jalapeños is the hotness. The heat is so inconsistent. I like the flavor of jalapeños but if you get an extra hot one, you loose the flavor. Yeah, so when you put them in, ya gotta taste test!Jalapenos usually vary between 2,500 to 10,000 Scoville Units. Which is a lot of variation.
