We can't follow ALL of the Bible, but we could say that all of the Bible is for us and not just the Jews.But, unfortunately, many, many people claiming to "follow all of the Bible" pick and choose laws and rules from just about any old section of the book they desire........ as long as the "commands" they select fit what they want others to have to adhere to.

It could be a prefiguration of that too.

I am not so sure that you are "bad with eschatology". We may not see eye to eye on all the future prophecies, but we are secure on that which is necessary for salvation.
It is my belief that Exodus 19:6 is referring to the time in which the earthly kingdom will be established in which the nation of Israel will be a kingdom of priest. If the Jews had accepted the kingdom when Jesus offered it when rode into Jerusalem on that colt, and the Jews used palm branches on that day, then the church would not exist as we know it. But God knew that they would reject the offered kingdom.
It is also my belief that rejection of the Messiah would happen, that is the reason that we are told that Jesus was crucified before the foundation of the world. What else could it have been a prefiguration of?

Very specific instructions for the Apostles or for teachers, elders, deacons. Although many of their attributes should also be for us. Sorry, no Bible, but I'm sure you know the verses.
Also, I like to always remind us that Jesus coming abolished the civil and ceremonial laws of the old testament... You have heard it said....And then He corrected the law.
He did not abolish the moral law...
