John 4:24 God is a Spirit: and they that worship him must worship him in spirit and in truth.
And He says a spirit has no body.
Luke 24:39 Behold my hands and my feet, that it is I myself: handle me, and see; for a spirit hath not flesh and bones, as ye see me have.
So if Jesus speaks the truth, then that verse is a metaphor, not a literal description. I believe the Bible; you believe your own interpretations.

Why not just accept scripture as it is? Let God be God and accept it as He gave it to you?

The nature God used was created by Him before He could ever use it. Man was created of the dust of the ground. The dust of the ground was already spake into existence by God.
