The consumption of kæst skata, or rotted skate, on the 23rd of December is a holiday tradition derived from the West Fjords of Iceland. The dish—which many swear by, and others find especially foul—is most often imbibed at special skate gatherings around noon on the 23rd, and is often served along with potatoes, butter, rye bread and shots of brennivín (most West Fjords experts recommend drinking milk with the skate, as the fish is “intoxicating in and of itself”).
The skate is a chondrichyte, and therefore ferments when allowed to rot, as its urine is distributed through its flesh and goes through a chemical change over time. They are in fact poisonous if eaten before the fermentation process is complete. It is fermentedby throwing it in a box and letting it lie for three weeks.

In case you didn't catch it, he said it's allowed to ferment at 20 degrees C, which is 68 degrees F. You can just imagine what it's like after three weeks at that temperature.

Do you suppose the millions of people who are eating stamped plugs of ray and skate wings.... thinking they are having scallops.... have any idea of what is really on their plates?
 
Found some venison back straps in the freezer. Decided to leave them whole, marinade them in Dale's Steak Seasoning, wrap them in bacon, and cook on the charcoal grill until just a hint of pink remained. Turned out rather tasty.

If you're not familiar with Dale's Steak Seasoning you can substitute using Worcestershire, soy sauce, garlic powder, onion powder, and black pepper.

I haven't had any ray or skate. scallops from the lagoon? no thanks. they better be fried up real well. it don't trust that to be clean enough if not with the pollution issue.
the shell gas symbol is a scallop. ugly creature to see with them eyes. related to the clam and other mollusks.

There are two types of skate that are eaten. The more common is the thorny skate. This is what it looks like:

Only the fins are used, the rest is thrown away.

something good... this is the best chocolate cake ever ... most the recipe is on the Hershey can with a couple minor changes...

1 3/4 cups sugar
3/4 cup cocoa
2 cups flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon baking powder
good dash of cinnamon
mix it all up good
add
2 eggs
1 cup milk
1/2 cup veggie oil
2 teaspoons vanilla
mix that up
and add
1 1/8 cup boiling strong coffee

bake in 2 ..9 inch pans or 1 .. 9 by 13

about 25 30 minutes

top with vanilla ice cream or real whipped cream

These directions are high altitude

Just a touch of seedless raspberry spread on the warm cake ahhhh

I don't for life of me understand why we American love crabs and lobsters. they aren't called bottom feeders for nothing.
