Thank you, gonna try that, sounds delish, the main use for pumpkins here is soup, ugh, I've never even heard of pumpkin soup,
blows their mind when we make pumpkin pie, ...this will too!

I love pumpkin.But I do not like the fresh so much.I have tried it.I guess I grew up on the canned stuff.:shrug
 
Costco has goooood double chocolate chip muffins, and praise the Lord we have a copy cat recipe that is just like them.

I have seen a few copy cat recipes.One I make is for a "Cheesecake Factory" Pumpkin cheesecake.It is really good.We usually have it with Christmas dinner.

Ain't no canned here, ...one Friday night in January of '81 I came home from work on a Friday night and found myself suddenly single, came to the stark realization real quick I was going to starve if I didn't learn how to cook, next day bought a Betty Crocker cookbook, ...saved my cookies here because there is a recipe in it for cooking pumpkin, ...all things work together for good to those that love God,... thank you Jesus.
 
I have seen a few copy cat recipes.One I make is for a "Cheesecake Factory" Pumpkin cheesecake.It is really good.We usually have it with Christmas dinner.


Love cheesecake too, it's a real hit here, ahh the advantage of having an American in the family, wanna share that too?

The Cheesecake Factory Pumpkin Cheesecake
Directions:

  1. Preheat oven to 350 degrees F.

  2. Make the crust by combining the graham cracker crumbs with the melted butter and 1 T sugar in a medium bowl.

  3. Stir well enough to coat all of the crumbs with the butter, but not so much as to turn the mixture into paste.

  4. Keep it crumbly.

  5. Put foil partway up the outside part of an 8-inch springform pan.

  6. Press the crumbs onto the bottom and about two-thirds of the way up the sides of the springform pan.

  7. You don't want the crust to form all of the way up the back of each slice of cheesecake.

  8. Bake the crust for 5 minutes, then set aside until you are ready to fill it.

  9. In a large mixing bowl combine the cream cheese, 1 C sugar, and vanilla.

  10. Mix with an electric mixer until smooth.

  11. Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue beating until smooth and creamy.

  12. Pour the filling into the pan.

  13. Bake for 60-70 minutes.

  14. The top will turn a bit darker at this point.

  15. Remove from the oven and allow the cheesecake to cool.

  16. When the cheesecake has come to room temperature, put it into the refrigerator.

  17. When the cheesecake has chilled, remove the pan sides and cut the cake into 8 equal pieces.

  18. Serve with a generous portion of whipped cream on top.
* My biggest challenge here was finding an 8 inch springform pan.I had to special order it.
 
Thank you so much, this is an answer to a desire of my heart, ..I was wondering what I was going to do with all of the pumpkin, ...my wife's cousin is in charge of the local dump, he knows I make pumpkin pie, 'cuz occasionally there is a piece or two that is left from the feed and we send them to his house, he lives next door, ...this week he came home with 8, 9 large pumpkins, told me to take all I wanted because he has a lot more that will be ready to harvest in a week, ...looks like I'll have pumpkin running out of my ears, and then you precious turn me on to a couple of new recipes, praise the Lord.

Pumpkin bread is really good.Make a couple of loaves and freeze some.

We make banana and zucchini bread, our banana trees gives us 100# regimes, so the freezer is full of banana bread, ...pumpkin is a good idea, thanks.

This is on my to do list,

Pumpkin Pancakes

1 tsp pumpkin pie spice
1/2 tsp salt

1/3 cup pumpkin puree

Combine flour, brown sugar, cinnamon, baking powder, salt, pumpkin pie spice and vanilla. In another bowl beat slightly egg, milk and pumpkin and dry ingredients and beat until blended. Cook for 2-3 minutes per side.

Top with: maple syrup, ice cream, whipped cream, chocolate or caramel syrup.

Pumpkin pancakes do not sound good to me.I am a purist.You must live in a tropical country to have banana trees.

My mom always served pancakes and waffles with Philadelphia Pimento Cream Cheese, liquified it with some milk, I'm from the generation where sweets were a rare treat and soda pop came in glass bottles and were kept cold in vending machines with refrigerated water, anyways, no syrup, so I'm weird, ...today I still eat pancakes and waffles with cream cheese and have taught my wife and niece the same, but they also add maple syrup, now that is a combination I couldn't handle, so..., the pumpkin pancakes will be served with creamed cheese, ....and syrup.

Tahiti.I used to work with several people from Tahiti.A beautiful place.
 
Today it will be chicken breast a fresh salad and maybe sweet potatoes. I would have done a baked white potatoes but I don't feel like going to the store to get butter.

Yep, been here going on 24 years, I believe Kathi's photo is Mt Bali Hi on the island of Bora Bora made famous in the Roger's and Hammerstien's musical South Pacific, I've never visited the island of Bora Bora, only Tahiti and her sister isle, Moorea.

Ha, my wife says it's Mt Routui on the island of Moorea and those are the over-water bungalows of the Club Bali Hi, :oops2

Kathi can you help me out, it that is true then my apartment was about 100 yards to the right in the photo, ...I must be getting old!
