Yo in this case is a colloquial sentence ending, meaning something like, "it certainly is" or "I agree". The textbook expression would be "Kawaii desu ne" for "it's cute, isn't it".

Horse is "uma", so maybe you could name her after Uma Thurman, who wielded a pretty wild samurai sword in the Kill Bill movies?
